Will there be fire breathing versions of the bronze bulls at any point or do they not exist in DL version of greek mythology?

I did think about that and I'm still thinking about it, to be honest; so the answer is "maybe"... I have no plans for other Taurokolossi, though, so probably not.

Speaking of Automatons, once they've been awaken, is that for good, or is there a sort of on/off button (in the shape of a complex technomagical ritual of course) , so that they could be spared between battles, or during a long journey ?

A good question!
They are always on. As soon as they are "awakened" they are alive, forever. Theoretically, as they harness the power of the sun, they can live for as long as a sun lives - but in all likelihood they will be split apart in battle.
